Egg Scramble Muffins

My kids LOVE eggs! But do I want to make them every single morning? Nope! So I threw something together a few weeks ago and they were a huge hit! AND I can make a whole pan of them and have several breakfasts and even a quick lunch or dinner, if I want!

What you need:
  • 8 eggs
  • Cooked bacon, sausage, ham or turkey
  • Broccoli
  • Shredded cheddar cheese
  • Cooking spray
  • 12 count muffin pan
Spray your muffin pans. I had some leftover bacon and broccoli so I put a little bit in each muffin cup. Mix 8 eggs  and add to each muffin cup. Top each one with a little shredded cheese. Bake at 375° for about 15 minutes.

You can use any cooked meat, if you'd like: sausage, cubed ham or turkey, whatever! I just happened to have bacon leftover. And the broccoli? They didn't say a word about it and next time I have leftover spinach, I'm going to try that!

Serve with a grain and a fruit and you've got a nice, easy meal! I am not kidding when I say they ate these several times during the week and when they asked for them again the following week, I made up another pan. For leftovers, I popped two in the microwave for 20 seconds and they were happy!
