Everyday Paleo Family Cookbook - Real Food for Real Life

Being a Macaroni Kid publisher has its perks, and my latest has been the opportunity to review a great new cookbook ~ Everyday Paleo Family Cookbook, by Sarah Fragoso. (Scroll down for the Slow Chicken Curry recipe.) Don’t be scared off by the fact that this is a Paleo cookbook. The recipes are healthy, wholesome, and delicious! Don’t know about the Paleo philosophy of eating yet? Think unprocessed foods - meats, fruits, vegetables, nuts/seeds. My own personal experience with Paleo has been that my chronic fatigue and chronic pain have pretty much disapppeared. I'm not a doctor, and everyone's experiences will be different, but that's what's been the case for me. CLICK HERE for more info about Paleo.

When my in-laws were visiting last month, I used them as guinea pigs fed them Sarah’s Slow Chicken Curry. Everyone, and I mean EVERYone, loved it! Have I told you about my super-picky 4-year-old? The one who would live on mac & cheese, chicken nuggets, and “butter bread” if we let him? Even HE loved it! He said it smelled really good while it was cooking, and he licked his bowl clean when he was finished eating. This has NEVER happened before. (Please look past the atrocious table manners to the fact that this is one delicious meal!)

Everyday Paleo Family Cookbook is much more than a cookbook. This informative book has the basics of Paleo and some of the why's for following a Paleo diet (along with where to go for more scientific information), how to get your family - including the kiddos - started along the Paleo path, lunchbox ideas for kids and adults, quick/basic meal ideas, a meal plan, a shopping list, and RECIPES of course - including treats. I appreciated Sarah sharing her story, and identified with parts of it....like the fact that she didn't bring her family on board right away when she first started her Paleo lifestyle. Her writing style is friendly, like she is talking to you, and she includes a "Something Extra" feature with each recipe. The photos will make your mouth water. And, most importantly, the recipes (at least the ones I've tried so far) are keepers!

Slow Chicken Curry

Prep time: 30 min
Cook time: 4-7 hr
Serves: 5-6

Ingredients:
2 T. curry powder
1 T. paprika
2 t. sea salt
1 t. black pepper
2 lb boneless, skinless chicken thighs
4 garlic cloves, minced
1 yellow onion, sliced
3 carrots, diced
4 celery stalks, diced
1 cup full-fat canned coconut milk
1 c. homemade chicken broth

Directions:
  1. In a small bowl, mix all of the dry spices together.
  2. Place the chicken thighs in a slow cooker and pour the spice mixture over the chicken thighs and toss together until all the thighs are coated with the spices.
  3. Sprinkle on the minced garlic and add the onions, carrots, and celery.
  4. In a small mixing bowl, whisk together the coconut milk and the chicken broth.
  5. Pour the coconut milk and chicken broth mixture over the top of the chicken and vegetables and cook on high in the slow cooker for 4 hours or on low for 6-7 hours.
[Editor's notes: I used chicken breasts instead of thighs, and store-bought organic chicken stock instead of homemade chicken broth. I felt the recipe was a little too salty, probably because of the chicken stock I used, so I would omit the extra sea salt next time around. I also went a little easy on the onions. This is great served soup-style or over rice.]
