Parkway Food Hall Is Now Open in Longmont - Everything is Delicious!

June 1, 2024

I'm so thrilled that a Food Hall has landed in Longmont! This eatery concept is fantastic for diners, but it also offers restauranteurs the opportunity to do something they couldn't do on their own. By sharing the space they can bring their concept to life, and diners have tons of variety to choose from.

My husband and I had the opportunity to visit the Parkway Food Hall during their Grand Opening event along with the MacKID Longmont/Broomfield publisher and her husband, and I can say from personal experience that these restaurants are all delicious!

Parkway Food Hall’s highly anticipated (food) vendors include:

Baa Hachi is a new Japanese street food concept from the award-winning Farow husband-and-wife team. The concept is led by Chef Adam Chan, who grew up in Hong Kong and has worked at Michelin-starred restaurants, including Tate Dining Room in Hong Kong and Ever Restaurant in Chicago. Dishes include Tonkatsu Ramen, Okonomyaki, Pork Belly Bao Buns, a Miso-Glazed Salmon Bowl, and more. **We sampled the Okonomyaki (a Japanese cabbage pancake) and the Pork Belly Bao Buns and both were delicious. I've never found Okonomyaki on a menu and it's one of my favorite things since we had a Japanese exchange student make them for us!

H3ersh3r has become a cult favorite whole hog mobile barbecue catering service and food truck. Their Parkway stall will be their first brick-and-mortar location, serving up their smoked meats, barbecue sandwiches, and notable sides like white cheddar mac-and-cheese.  **We had to fight to even get a taste of the ribs at our table. My husband dubbed them the best ribs he'd ever had and then both the husbands tried to gobble them up without sharing!

Farow will also be moving its pop-up Pie Dog into Parkway. Pie Dog opened in Farow in January 2023 and is known for its thin-crust Neapolitan-style pizzas with locally sourced organic flour**We sampled the margarita pizza, and it was delicious!

Spice Fusion, under Chef Ram Kumar Shrestha, is an innovative blend of Indian and Thai cuisine from the owners of Boulder’s Gurkhas on the Hill. **I didn't order this bite, and no one can remember what we ordered, but I enjoyed it!

Cleaver & Co. will open its third location following its success in South Denver’s Junction Food & Drink Food Hall and Cherry Creek Food Hall (formerly Grange Food Hall.) Cleaver & Co. has perfected juicy grilled burgers and chicken sandwiches, crispy fries, and luscious shakes. **We sampled a huge delicious fried chicken sandwich. I was also tempted by the loaded tots and their milkshakes!

Shawarma Shack—This will be the second location for Shawarma Shack, a Mediterranean concept offering traditional shawarma wraps, fresh salads, and bowls with a variety of meats accompanied by pickled vegetables and creamy tahini sauce. Hummus, falafel, and tabbouleh will also be available for additional healthier options. **We sampled the lamb gyro at our table, along with some delicious falafel. I want to go back and try the chicken shawarma!

Previously announced, Chile con Quesadilla from Denver (Top Taco Denver winner in 2021 and 2022) was the first concept to sign on. **We went all in and got the mac and cheese quesadilla and fries with their famous green chile sauce. Delicious!

HipPOPs handcrafted gelato combines old-world Italian gelateria traditions with modern technology. **These surprised me! I'm not a huge ice cream fan, but each component on the 'pop' was so good that I couldn't stop eating it. They're totally customizable, too!

I thought the food was reasonably priced for sharing, and the kids meals were a great value too. I loved that there was a central bar and was very impressed by the two spritz style cocktails I enjoyed. They'll also have special brewery collaborations on tap that you won't be able to get anywhere else!
